Bell peppers are a source of carotenoids (red and yellow pigments), which are Vitamin A precursors. Because carotenoids are the yellow and red pigments of plants, their content within bell peppers increases with ripening. As the carotenoid (and Vitamin C) content of bell peppers increases with ripening, so does the vegetable`s total antioxidant capacity. However, the bioavailability of carotenoids depends in part on the simultaneous consumption of fats; for example, the health benefits of the carotenoids in bell peppers will be compromised when consumed with low-fat or fat-free dressing.
